Low fat banana bread!

I discovered this banana bread via Pinterest. I tasted this bread from Manon, and it was delicious! So I decided to make it myself too, to take it to the Swan Market! (you can see it on the photo in the previous post)



I used a recipe from the Viva-forum.

125 gr whole wheat flour
125 gr oatmeal
75 gr soft brown sugar
2 teaspoons baking powder
1 teaspoon baking soda
tiny bit of salt

1/2 teaspoon cinnamon

1 teaspoon vanilla flavoring
150 ml buttermilk

2 big eggs
3 big ripe bananas
I also put some walnuts and raisins in the bread.You need a pastry mold of 26 x 12 x 8 cm (volume 750 gr).

1. Start mixing the oatmeal with the buttermilk in a big bowl. Leave this soaking for about an hour.

2. In another bowl mix the other dry ingredients (whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon). Grease the pastry mold wit a bit of olive oil. Put a little bit of oatmeal on the surface and the sides. Preheat the oven on 180°C.
3. Put the bananas with de soaked oatmeal and mash it with a fork. Then add the eggs, the nuts and the raisins.
4. Add the dry ingredients. Mix it quickly and put it in the greased mold. You should do this fast, because when you put these two together, the bread will start rising.

5. Cover the mold with aluminium foil, make sure there's enough space for the bread to rise.
6. Put the mold in the preheated oven straight away, and let it bake for 45 minutes. Take away the foil after 15 minutes.
7. The bread is ready if you prick a skewer in it which comes out clean.
8. Leave the bread to cool down for 10 minutes in the mold, then take it out to cool further down. Leave it for an hour or so, before cutting and eating it (I didn't to this ;))


Instead of a bread, you can also make muffins out of this dough. The bread is not very sweet, and not very moist. It's great for breakfast, or with a cup of tea!
